your question is not clear.
Do you want to fit a Gaussian to your results? There are plenty of
programs which can do that (PAW, ROOT, Gnuplot...)
For instance, about Gnuplot look at

But that is not what MCNPX's GEB option does. It convolutes the output
spectrum with an energy-dependent resolution, that must be provided by the
user. There is no such option in FLUKA, but you can do it yourself (provided
you know the resolution function) by applying it yourself to each of the
DETECT output channels, and adding up the results.

In any case, this is a post-processing procedure which it is possible to
carry out, but is not provided by FLUKA.
